Chicken Scampi, Freezer meal

Tonight I cooked up one of the freezer meals that I made from my first blog post when I made four chicken freezer meals from one 4 kg box of frozen chicken breast that I got on sale from Safeway.

Chicken Scampi was thawed out, reheated in a saucepan.  I used whole wheat spaghetti to serve it on and topped with fresh chopped tomatoes and Parmesan cheese.

The meal was easy and tasty, the only addition I would be more fresh ground pepper.  Also there is a lot of leftovers, maybe I would have split the  recipe in half or made two dinner portions instead of one.

Recipe from Once-A-Month-Cooking, Family Favorites
By:  Mimi Wilson & Mary Beth Lagerborg

Chicken Scampi

1/4 cup chopped green onions
3 teaspoons chopped garlic
1/2 cup butter
1/4 cup olive oil
1 tablespoon lemon juice
4 pounds boneless, skinless chicken breast halves, cut into1-inch strips
2 tablespoons dried parsley
1/2 pepper
*pasta and fresh tomato for serving day

In a large skillet, sauté the green onion and garlic in butter and oil.  Add the lemon juice, chicken, parsley, and pepper.  Cook the chicken, stirring occasionally for 12 to 15 minutes, unit no longer pink inside.  Cool.  Pour into a labelled 1-gallon freezer bag and freeze.

To serve, thaw chicken mixture.  Cook pasta according to package directions.  In a large skillet, cook the chicken mixture over medium heat for 6 to 190 minutes or until chicken is heated through.  Spoon the chicken over the pasta.  Garish with chopped tomato.

Serves 8

ENJOY!

Best Grilled Steaks EVER

Last Summer I picked up a really great grilling cook book from Williams-Sonoma.

I have always wanted to be a better griller and knew this was the ticket and I was right.  This $40 cook book has taught me the way to grill perfect steaks.

Sure the method is easy, might not have needed the cook book but the other recipes all look delicious and look forward to trying them this summer.

Plus it is nice to take a break from freezer meals, once in awhile.  Plus my family was super happy with their grilled steak that were tender and juicy!!

Happy grilling everyone.

Italian Slow Cooker Chicken, Freezer Meal

I cooked up one of my freezer meals that I made on my first post.  I thawed out the Italian Slow Cooker Chicken.

I put it in the slow cookers and added potato wedges for the last two hours of cooking.

Very easy quick dinner, only the slow cooker insert and lid to clean!  Family liked it, I thought it could use more pepper.

I know I must work on my photography skills, doesn't look to appetizing here in this photo.

Italian Slow Cooker Chicken

4 boneless, skinless chicken breast halves
1/2 cup Italian salad dressing (I used Zesty Italian)
1 cup chopped green bell pepper
1 cup chopped onion
1 1/2 teaspoon chopped garlic
fresh ground pepper to your liking
*2 potatoes, peeled and cut into wedges to use on cooking day.

Combine all ingredients in Ziploc bag, label and freeze.

Thaw and place content of bag in slow cooker on low for 6 hours.  Add potatoes wedges for last two hours of cooking.  Cooking times can change due to your own slow cooker.

Enjoy!!

Taco Rice, easy Freezer Meal that kids love

I recently made a double batch of Taco Rice, the recipe is from 30 Day Gourmet and was one of the first freezer meal recipes that I tried.  It is easy and fast and made with staples from a well stocked kitchen.

So using these staples:

I like to serve it with flour tortillas, shredded cheese, lettuce.  If my husband was home I would have also served it with salsa & guacamole.  The recipe is not spicy, depending on your favourite taco seasoning you use.

Yummy, easy meal.  I knew there would be a lot of leftovers since there was only three of us eating but Ii planned on freezing them for quick and easy meal.  I think it would also be great for picnics and camping.
Enjoy!!

Southwestern Chicken, freezer meal

Tonight's dinner was a freezer meal that I prepped last week, see post below.  I thawed it, placed it in baking dish and baked for 50 minutes at 375'F in preheated oven.

It smelled delicious cooking, was excited to taste it.  When I removed it from the oven I did notice that it was a little runny/watery for my taste but I can modify that for next time.

It looked very nice, lots of veggies.  I served with white rice.  Next time I would also top with something fresh like cilantro.

The taste was nice, a tiny bit spicy so will adjust seasonings as well for that.  Please see my modified recipe below and let me know if you try it.

Southwestern Chicken

1 28-ounce can diced tomatoes, drained
1 1/2 cups each chopped red and green bell pepper
2 cups chopped red onion
1 1/2 teaspoon minced fresh garlic
2 tablespoons lime juice
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/2 teaspoon Tabasco sauce, can be adjusted to your liking
5 boneless, skinless chicken halves, this as well can be adjusted to your family size.

Min all ingredients together and pour over the chicken in a 1-gallon freezer bag.  Label and freeze.

FOR SERVING, have on hand:
Rice and fresh chopped cilantro

To serve, thaw the ingredients.  Pour into baking dish and bake in preheated 375'F oven for 50 minutes.
