In an hour I was able to assemble four freezer meals.
First, Quick & Easy Chinese Chicken, which will be thawed and baked in the oven. Will serve with rice and broccoli.
Second, Southwestern Chicken which will be thawed and baked in the oven. I will serve this with rice as well.
Third, Italian Slow Cooker Chicken which will be thawed and cooked in a slow cooker having only to add 2 potatoes cut into wedges during last hour of cooking. Will serve with a salad.
Fourth, Chicken Scampi which will be thawed and reheated, serve over fettuccini, top with fresh chopped tomatoes and will most likely have a nice green salad serve along with it.
The Chicken Scampi is the only recipe that the chicken had to be thawed and cut up. The other recipes, I just put the chicken breast in the bag whole, still frozen.
So, I was hoping to make more than four meals and possibly could but I wasted to make sure the meals were big enough for my family of three with possible left overs.
I spent under $30.00 for four easy assembled freezer meals. I only need a handful of things, most of which I will have on hand. From start to finish I spent an hour in the kitchen, including minimal clean-up.
I haven't used/finished any of the meals yet but will blog the results, maybe one of them will become a family favourite. Also, I am already planning for the next time Safeway has the chicken on extreme price/10% day sale.
That's it four freezer meals, ready for a busy day.
