I recently made a double batch of Taco Rice, the recipe is from 30 Day Gourmet and was one of the first freezer meal recipes that I tried. It is easy and fast and made with staples from a well stocked kitchen.
So using these staples:
I like to serve it with flour tortillas, shredded cheese, lettuce. If my husband was home I would have also served it with salsa & guacamole. The recipe is not spicy, depending on your favourite taco seasoning you use.
Yummy, easy meal. I knew there would be a lot of leftovers since there was only three of us eating but Ii planned on freezing them for quick and easy meal. I think it would also be great for picnics and camping.
